Sweet Potato Puffs

Ingredients

Add mashed sweet potatoes to shopping list 2 cups mashed sweet potatoes

Add egg yolks, beaten to shopping list 2 egg yolks, beaten

Add cream to shopping list 1 cup cream

Add salt to shopping list 1/2 teaspoon salt

Add egg whites, well beaten to shopping list 2 egg whites, well beaten

Directions:

Preheat oven to 350 degrees F

Mix potatoes, egg yolks, cream and salt; heat in saucepan. When very hot, remove from heat.

Add egg whites; beat until light. Pile loosely on buttered platter; brush with egg white.

Heat in oven until lightly browned.
